Ingredients For marinated shrimp salad

  • 2 lb
    cooked medium shrimp
  • 1 md
    red onion sliced & separated into rings
  • 2 md
    lemons, sliced
  • 1 c
    pitted ripe olives
  • 1/2 c
    olive oil
  • 1/3 c
    minced fresh parsley
  • 3 Tbsp
    red wine vinegar
  • 3 Tbsp
    lemon juice
  • 1 clove
    garlic minced
  • 1
    bay leaf
  • 1 Tbsp
    fresh minced basil
  • 1 tsp
    ground mustard
  • 1/4 tsp
    black pepper

How To Make marinated shrimp salad

  • 1
    In a 3qt. glass serving bowl, combine the shrimp, onion, lemons & olives. In a jar with a tight fitting lid, combine remaining ingredients; shake well, pour over shrimp mixture and stir gently to coat. Cover & refrigerate for 24 hrs.stirring occasionally. Discard bay leaf before serving
