Every year we have a Christmas Open House and I make about 20 pounds of this marinated shrimp. It is one of the most popular items I serve. I think some come just to eat the shrimp.

Ingredients For marinated shrimp

2 lbunpeeled, medium fresh shrimp

6 csalted water

1/2 csugar
-
1 1/2 cwhite vinegar

1 ccanola oil

1/4 ccapers, undrained

1/2 tspkosher salt

1 1/2 tspcelery salt

3 mdred or white onions, sliced and separated into rings
How To Make marinated shrimp

1Peel shrimp leaving tails on. De-vein if desired. Bring water to boil; add shrimp and cook 3 minutes or just until shrimp turns pin. Drain and rinse with cold water. Chill.

2Combine sugar and next 5 ingredients in a shallow dish. Add shrimp alternately with onions. Cover and chill at least 6 hours, turning often. Drain and discard marinade before serving.
