creamy shrimp-salad topper

I found this on the box of Ritz Crackers. I want to try it for my next buffet, party, or baby shower. I took the picture from the box. I was thinking I could also use those tiny canned shrimp, well-drained.

Ingredients For creamy shrimp-salad topper

  • 1/4 lb
    clean cooked shrimp, chopped
  • 2 Tbsp
    chopped celery
  • 1 Tbsp
    chopped red onion
  • 2 Tbsp
    mayonnaise
  • 1 tsp
    lemon juice
  • 2 sm
    plum tomatoes, cut into thin slices
  • ritz crackers

How To Make creamy shrimp-salad topper

  • 1
    Combine shrimp, celery, onion, mayonnaise, and lemon juice. Refrigerate for 1 hour.

    Just before serving: Place a thin slice of tomato on top of each Ritz cracker. Add 1 teaspoon of shrimp mixture. May garnish with lemon zest or chopped fresh parsley or cilantro.
