I am forever on a low carb diet;the only way I seem to lose weight. I developed this recipe when I was at the grocery store ogling the stuffed mushrooms at the meat counter.

Ingredients For crab stuffed portabellos

  • 2
    large portabello mushrooms
  • 1/2 c
    imitation crabmeat or real crabmeat, chopped
  • 2 slice
    low carb bread made into bread crumbs with food processor
  • 1/2 c
    shredded cheddar cheese or jack cheese
  • 1/4 c
    small diced red pepper
  • 1/2 tsp
    salt and pepper
  • 1/2 tsp
    minced garlic
  • 1/2 tsp
    italian seasoning
  • 1/2 tsp
    parsley flakes, dried
  • 1/2 c
    mayo
  • 1/4 c
    shredded cheddar or jack cheese for topping

How To Make crab stuffed portabellos

    Preheat oven to 350. Make breadcrumbs out of low carb bread. Clean and scrape portabello mushrooms.

    In a bowl mix breadcrumbs, crabmeat, seasonings, cheese, and mayo. Mixture should be moist and well mixed. Add more mayo if necessary.

    Put portabellos in small baking pan that is lightly greased. Fill portabellos with filling mixture. Top with extra cheese.

    Bake at 350 degrees for approximately 35 minutes or until hot and bubbly. Cool slightly and serve. Recipe can be doubled for more servings.
