Ingredients For crab meat evangeline

1/4 cup butter, 1/2 stick

1/4 cup flour

1 cup cream
-
1/4 cup sherry

salt and pepper to taste

1 pound white crab meat

3/4 cup grated sharp cheese

1/8 to 1/4 t. cayenne pepper
How To Make crab meat evangeline

1Heat butter in pan until melted. Stir in flour. Whisk in cream. Cook until thickened, stirring constantly. Stir in sherry. Season with salt and black pepper.

2. Remove from heat. Stir in crab meat. Spoon into a buttered baking dish. Sprinkle the cheese over crab meat mixture. Sprinkle with the cayenne pepper.

3Bake at 325 until cheese melts. Serve with cracker. May substitute 8 oz. crab meat and 8 oz. chopped cooked shrimp for the 1 pound crab meat. Serves 6 to 8
