This is another old recipe from that farmhouse that I found all these old historic recipes in. I don't know if it was generations and generations of recipes collected that wallpapered the entire kitchen. It seems there were many years collected there, some really old,most unique and odd sounding, but their way of cooking for their way of life. I find it so fascinating and am so happy to share these,so all these old recipes will live on.

Ingredients For clam fritters

  • 1 pt
    soft clams
  • 2 c
    flour
  • 2 1/2 tsp
    baking powder
  • 2
    eggs
  • clam juice
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/2 c
    milk

How To Make clam fritters

  • 1
    Drain clams and chop fine. Reserve clam juice when draining clams. In a bowl add flour, baking powder; mix well.

    In a small mixing bowl add eggs, milk and clam juice beat until well mixed. Add this mixture slowly to flour mixture. Add Clams. Season with salt and pepper.

    Drop from a spoon into hot fat (375^) and fry until golden brown. Serve while hot.
