I make these as an appetizer before making a seafood dish and it goes very well w/ any seafood dish.

Ingredients For bacon-shrimp stuffed potatoes

14baby new potatoes

2 Tbspdijon mustard

1 stickolive oil
-
1 tspold bay seasoning
-
18 oz pkg frozen peeled, cooked shrimp, thawed and chopped

4 ozreduced-fat cream cheese, softened

1 cshredded gouda cheese
-
5 slicecooked bacon, crumbled

1 tspold bay seasoning

1/4 cchopped fresh chives
How To Make bacon-shrimp stuffed potatoes

1Heat oven to 425. Cut potatoes in 1/2 lengthwise. Scoop out potatoes, leaving a 1/4" shell. Cut a thin slice from bottom of potatoes, to leave them flat.

2In bowl, whisk together mustard, oil and 1 tsp old bay seasoning. Brush insides of potato shells w/ oil mix. Place potatoes on a baking sheet. Bake until tender, about 30 mins.

3In another bowl, combine shrimp, cream cheese, gouda cheese, bacon and 1 tsp old bay seasoning. Spoon filling into potato shells. Bake for 15 mins or until cheese is melted. Garnish w/ chives.
