Ingredients For appetizer shrimp mold

1 can10.25 oz. can condensed tomato soup
-
3 pkg3-oz. pkgs. cream cheese, softened - cut into chunks (light cream cheese may be substituted)

1envelope unflavored plain gelatin
-
1/4 ccold water
-
2 ccooked shrimp, peeled and cut into pieces
-
1 cmayonnaise (can use light)
-
1 smonion, grated
-
1/2 ccelery, minced
-
dash of garlic powder, salt and freshly ground black pepper
-
1 Tbspfresh lemon juice
-
2 Tbspfresh flat-leaf parsley, minced

plain crackers
How To Make appetizer shrimp mold

1Add undiluted soup to a large saucepan over medium heat. Add the cubed cream cheese, stirring constantly, until the cream cheese has melted fully.

2In a small bowl, soak gelatin in cold water until dissolved. Add the gelatin to the hot cheese mixture. Remove from heat and let cool approx. 30 min.

3Once cool, add shrimp, mayonnaise, onion, celery, garlic powder, salt, pepper, lemon juice and parlsey and stir to blend.

4Pour the mixture into a large 2 quart oiled mold or dish with decorative rimmed sides. When ready to serve, run a knife around the edge of the mold and then dip mold quickly in hot water. Invert onto a serving platter.

5Garnish or decorate around molded dip. Serve with plain crackers.
