I love chicken wings, and I always have a bunch of vacuum-sealed bags in the freezer, with each one holding about a dozen wings or so. I have tried several options for cooking frozen wings; however, this particular method uses a combination of boiling in the bag and then popping them into a hot oven It really produces wings that are crispy on the outside, and tender yummy on the inside. FYI: Items like chicken wings that are vacuum sealed will keep well over a year in the freezer. So, you ready… Let’s get into the kitchen.

This recipe calls for the wings to be frozen in a boiling bag. So, I am using vacuum-sealed bags with the wings inside. Therefore, a vacuum sealer would be needed to make this recipe. In addition, you will need a baking sheet. If you have a rack to place the wings on, that would be nice; however, it is not necessary. I would also recommend some parchment paper to line the baking sheet. This will make cleanup a snap.

The Oil and Spices I tossed my wings in a combination of grapeseed oil, melted butter, and a bit of hot sauce. You could do something similar and add your own combination of dry spices or whatever you are comfortable with.
  • 4
Gather your ingredients (mise en place).
  • 5
Add the frozen wings in the vacuum-sealed bag to a pan or pot of boiling water and let them cook for about 15 – 20 minutes.
  • 6
Place a rack in the middle position and preheat the oven to 400f/205c.
  • 7
Remove the wings from the bag, pat dry, then toss with a bit of oil, and your favorite combination of spices.
  • 8
Place on a baking sheet, then put into the preheated oven.
  • 9
Bake until nice and crispy, about 25 – 30 minutes.
  • 10
If you are not using a wire rack, you need to turn them over about halfway through the baking process.
