Sometime mistakes produce the most amazing results. I had about 200 chicken wings in a brine (for a client), and for some unforgivable reason, I forgot about them. So, they were totally over-brined… solution. Well, we will talk about that later (think potato starch). What started as a mistake, came out in a brilliant recipe. So, you ready… Let’s get into the kitchen.

2 qtfiltered water

1/4 csalt, kosher variety

1 lbchicken wings

1/2 cpotato starch
- THE SAUCE

2 Tbspsweet butter, unsalted

2 tsphot sauce, franks
-
1 tsptamari sauce, or liquid aminos

1PREP/PREPARE

2Have you ever made a soup or stew that is too salty… Well, one of the ways to reduce the salt is to put a potato or two in the soup… so my idea was to use potato starch, and I am never going back…

3Gather your Ingredients (mise en place).

4Add the salt and water to a bowl, add the chicken wings, and place in the fridge for two hours.

5Place a rack in the middle position, and preheat the oven to 375f (190c).

6Remove the wings from the fridge and dry off with paper towels, or a tea towel.

7Toss with the potato starch, and place on a baking sheet, fitted with a wire rack.

8Place in the preheated oven, and bake for 20 minutes.

9Flip the wings, increase the heat to 425f (220c), and bake for an additional 20 minutes.

11Toss with your favorite sauce, and serve. Enjoy.
