poultry essentials: late night/early morning wings

Worked last evening/morning in the kitchen perfecting my Mexican dishes. About 1:00a I thought to myself: “I think I want a mess of chicken wings.” You probably do that too, yes? Anyway, the test kitchen was littered with stuff for my Mexican recipes, so I wanted something that would be easy to make, not be too messy, and be tasty. I opened the walk-in, picked up a vacuum-sealed package of frozen wings, and this is what I came up with. Olive oil makes them crispy, spices give them flavor, and 2-heat baking, keeps the insides juicy. So, you ready… Let’s get into the kitchen.

Ingredients For poultry essentials: late night/early morning wings

    whole chicken wings
  • THE SPICES
  • 2 Tbsp
    olive oil, extra-virgin variety
  • 1 tsp
    ancho chili powder, or chili powder of choice
  • 1/2 tsp
    ground cumin
  • OPTIONAL DIPPING SAUCE
  • 2 Tbsp
    mayonnaise, plain variety, i prefer duke’s
  • 2 Tbsp
    sour cream
  • 1 Tbsp
    lime juice, freshly squeezed
  • 1 - 2 dash
    hot sauce, i prefer frank’s
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste

    You will need a parchment-lined, rimmed baking sheet to make this recipe. If you have a wire rack for your baking sheet that would be outstanding, but it is not necessary.

    Chicken Wings A whole wing is composed of three parts: The drumette, the flat or wingette, and the tip. Separate the drumette from the flat, then freeze and save the tips for flavoring soups and stocks. With six wings that will give you twelve separate pieces.

    Gather your ingredients (mise en place).

    Add the oil and spices to a bowl, then whisk to combine.

    Completely dry off the wings, then place into the bowl and toss to coat.

    Add the wings to your baking sheet.

    If you are not using a wire rack, you will want to turn the wings over, halfway through the baking process. If you are using a rack, this will not be necessary.

    Place a rack in the middle position and preheat the oven to 425f/220c.

    Add the wings to the preheated oven and bake for 20 minutes.

    Lower the heat to 350f/175c, then bake until the wings are crispy and beginning to brown, about another 12 – 15 minutes.

    If you are making it, simply whisk all the ingredient together in a bowl, and taste for proper seasoning.
