Ingredients For peanut-coated chicken strips with dipping sauce

3/4 croasted/salted peanuts, finely chopped

1/2 cpanko bread crumbs

1/4 cfresh cilantro, chopped

salt and pepper

2pkgs. boneless, skinless chicken breasts, cur crosswise into 24 thin strips

3 Tbspvegetable oil
-
1/2 cmayonnaise
-
1-2 tspasian chili garlic sauce (or you can use sweet chili sauce)
How To Make peanut-coated chicken strips with dipping sauce

1In a shallow dish, combine crushed peanuts, bread crumbs, cilantro and 1/2 tsp. salt & pepper.

2Coat chicken pieces in crumb mixture (pressing gently to help the coating adhere to the chicken).

3Heat the oil in a large nonstick skillet over medium-high heat. Cook the chicken in batches until golden brown - 2-3 minutes per side. Add more oil if necessary.

4Transfer to a platter when done. Meanwhile, combine the mayo and chili garlic sauce (or sweet chili sauce) and serve with chicken.
