Ingredients For dip essentials: beef & chicken tenders sauce

  • PLAN/PURCHASE
  • 1 Tbsp
    sweet butter, unsalted
  • 1 Tbsp
    flour, all-purpose variety
  • 1 c
    whole milk
  • 1/4 c
    grated parmesan cheese
  • 1 tsp
    smooth brown mustard, i prefer grey poupon
  • 1 Tbsp
    fresh clover honey
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste
  • black pepper, freshly ground, to taste

    I did not include a recipe for chicken or beef tenders; although I have several out there, this is just a good tasty sauce that compliments beef and chicken.

    Gather your ingredients (mise en place).

    Add the butter to a saucepan over medium heat.
  • 5
    When melted and the foaming subsides, add the flour.
  • 6
    Cook until the mixture resembles a thick paste, about 2 – 3 minutes.

    Chef’s Note: Mixing a fat with flour is called making a Rue, and it is used as a thickener for sauces, soups, and stews.

    Slowly whisk the milk in, and stir, while lightly simmering, until the sauce thickens, about 2 – 3 minutes.

    Add the parmesan cheese, mustard, and honey, and stir until the cheese melts into the sauce, about 2 – 3 minutes.

    Season with salt and pepper, to taste (I like mine peppery).
