This is my "go to " chicken salad recipe for any party or get together; deli-style.

Ingredients For crunchy chicken salad

3 ccooked chicken , shredded then chopped

1/2 cfinely diced celery
-
1/2 cwater chestnuts, rinsed and drained, then diced
-
1/4 cred bell pepper, diced
-
1/4 cyellow bell pepper, diced
-
1/4 cchopped red onion
-
1 1/2 cmiracle whip salad dressing or mayonnaise(more or less to make moist)

1 pinchground red pepper, or to taste
-
1/4 tspeach salt and white pepper
How To Make crunchy chicken salad

1Shred the chicken(about 3 cups).. Combine chicken. celery, water chestnuts, and the next 3 ingredients in a large bowl.

2Stir together the salad dressing, ground red pepper, salt and pepper until well blended; spoon over the chicken mixture, stirring to coat. Cover and chill at least 4 hours.

3Note: Can use cooked salad shrimp in place of the chicken.
