This is supposed to be an appetizer, but I've managed to turn this dish into a main dish with soup or salads, french fries or even mashed potatoes.

Ingredients For chicken mushroom melts

1 1/4 lbchicken breasts, boneless and skinless, cut into 1/2 inch pieces

1 lbmedium fresh mushrooms, quartered

1 Tbspcanola oil

1 1/2 tspsoy sauce

1/2 cheavy whipping cream

1/4 cbutter, softened
-
3 clovegarlic, minced
-
16 slicefrench bread (1 inch thick)

1 1/2 ccheddar cheese, shredded
How To Make chicken mushroom melts

1In a large skillet over medium heat, cook chicken and mushrooms in oil for 5 minutes. Stir in soy sauce; cook 7 minutes longer. Stir in cream; simmer for 4-6 minutes or until sauce is thickened (do not boil).

2In a small bowl, combine the butter and garlic; spread over the bread. Place buttered side up on an ungreased baking sheet. Broil 4-6 in. from the heat for 2-3 minutes.

3Top each slice with 1/4 cup of chicken mixture. Sprinkle with cheese. Broil for 1-2 minutes or until the cheese is melted.
