Ingredients For chicken lettuce wraps

1/4 choisin sauce

3 Tbsplow sodium soy sauce

1 Tbsprice vinegar

1 Tbspgrated fresh ginger or ginger paste

1 tspchili sauce or sambal oelek
- CHICKEN LETTUCE WRAPS

2 tspsesame oil
-
1 lbground chicken
-
1/2yellow onion, minced
-
1red pepper, finely diced
-
2 clovegarlic, minced
-
1 canwater chestnuts, drained and finely chopped (8 oz)
-
1head butter lettuce (bibb lettuce), leaves removed, washed and dried

2green onions, thinly sliced
-
1/3 cdry roasted peanuts, coarsely chopped
How To Make chicken lettuce wraps

1To make the sauce, whisk together all ingredients in a medium bowl. Set aside.

2To make the wraps, heat the sesame oil in a large skillet over medium heat. Add the chicken and break it up as it browns. When the chicken is about halfway browned, add the onion and red pepper. Cook for 2-3 minutes, or until the onions and pepper soften.

3Reduce the heat to low and add the garlic and water chestnuts, cooking for 1 minute while stirring constantly.

4Whisk the sauce that you set aside and then add it to the skillet with the chicken and veggies. Stir to coat and simmer for 1-2 minutes to heat everything through.

5Spoon several tablespoons of the mixture into the lettuce leaves. Top with the sliced green onions and chopped peanuts. For best results, enjoy promptly.
