I worked a long time on making a good salt & vinegar wing recipe, and the game changer for me was the introduction of lemon/pepper seasoning. So, you ready… Let’s get into the kitchen.

Ingredients For appetizer essentials: lemon pepper, vinegar wings

    chicken wings, with wing tips separated and saved for stock or discarded
  • 1/2 c
    apple-cider vinegar
  • 1/2 c
    chicken stock, not broth
  • 2 tsp
    salt, kosher variety
  • 1 Tbsp
    lemon/pepper seasoning

    Gather your ingredients (mise en place).

    Whisk together the vinegar, chicken stock, and salt, place into the insert of your pressure cooker/instant pot, and add the wings.

    Set the pressure cooker to high, with a time of 8 minutes.

    After the 8 minutes, quick release the steam, remove the wings, place on a paper towel, and allow to rest for 20 minutes.

    Chef’s Note: Reserve the cooking liquid.

    Place a rack in the middle position, and preheat the oven to 400f (205c).

    After the wings have rested, toss in a bowl with the lemon/pepper seasoning.

    On a parchment-lined baking sheet, fitted with a wire rack, place the chicken wings.

    Put into the preheated oven until golden brown, about 20 minutes.

    Take the wings, and toss with about 1 tablespoon of the cooking liquid.
