12chicken wings, with wing tips separated and saved for stock or discarded

1/2 capple-cider vinegar

1/2 cchicken stock, not broth

2 tspsalt, kosher variety

1 Tbsplemon/pepper seasoning

1PREP/PREPARE

2Gather your ingredients (mise en place).

3Whisk together the vinegar, chicken stock, and salt, place into the insert of your pressure cooker/instant pot, and add the wings.

4Set the pressure cooker to high, with a time of 8 minutes.

5After the 8 minutes, quick release the steam, remove the wings, place on a paper towel, and allow to rest for 20 minutes.

6Chef’s Note: Reserve the cooking liquid.

7Place a rack in the middle position, and preheat the oven to 400f (205c).

8After the wings have rested, toss in a bowl with the lemon/pepper seasoning.

9On a parchment-lined baking sheet, fitted with a wire rack, place the chicken wings.

10Put into the preheated oven until golden brown, about 20 minutes.

11Take the wings, and toss with about 1 tablespoon of the cooking liquid.

13Serve while nice and hot with your favorite dipping sauce. Enjoy.
