This is my personal twist on an old favorite - Texas Caviar. My husband's family is from San Antonio, and like strong flavors like cilantro and garlic, so I adapted this to include a little something for everyone.

Ingredients For texas caviar - roeder style

1 canblack beans

1 canwhite corn

1 canblack-eyed peas

1 canrotel, drained, the spicy kind if you like it

2-3tomatoes, chopped

3-4chives (green onions), chopped

1bell pepper, green or red

2jalepenos
-
1-2 bunchcilantro, chopped

2-4 or mor clovegarlic, minced

1 pkgbleu cheese

1/2 tspsalt

1onion, chopped
How To Make texas caviar - roeder style

1chop and mix all, chill for a couple of hours or overnight to allow flavors to mingle. Add more or less of whatever you like.

2top with sour cream and garnish with a sprig of cilantro, if desired

3serve with chili cheese bites or parmesan toiles or corn chips, or like my husband, by the spoon full!
