Ingredients For spit fire grilled honey pineapple guacamole

3 mdavocados (semi soft)

1 & 1/2 cpineapple, fresh
-
2 smjalapenos, (red for the color) fresh & minced with or without seeds

2 mdtomatoes, fresh, small chopped size
-
1-2 Tbspsriracha hot chili sauce
-
1/2 tspginger powder (ground)
-
1 pinchcinnamon, ground
-
1 bunchcilantro, fresh
-
4 smlimes, juiced
-
2 Tbsphoney
-
1 Tbsporange juice, fresh
-
3 clovegarlic
-
2-4 pinchsalt and pepper
-
1 lbtortilla chips
-
1 lgpretty clear glass bowl
How To Make spit fire grilled honey pineapple guacamole

1Light your grill or turn it on to medium high. Cut in half & remove skin & the core seeds. Cut, remove skin, & core on your pineapple. Cut it into long slices. Grill both sides of the avocados & pineapple slices. 2-3 min on each side. Make sure to get the grill marks on both sides of the pineapple slices & avocados. While the pineapple slices & avocados are grilling:

2In a small bowl: add honey, orange juice, ginger, & cinnamon, & 1 tablespoon of the lime juice (1 whole lime juiced is approximately a tablespoon, juiced) Stir with fork. Set aside a pastry brush or a small spoon to brush on the pineapple. Now there is grill marks on your pineapple, brush the honey orange glaze on the pineapple. Let the glaze sizzle for 2-3 min. Remove & let cool.

3Make your guacomole. Cut your grilled avocados in a small dice. Also cut your pineapple in extra small dice. Keep a small sliver aside to have for your garnish. In a large bowl, combine avocado. Lightly mash with a fork the avocado. Add tomatoes, jalapeno, sriracha, & then your extra small diced size pineapple. Stir. Mince or finely chop your cilantro & add in with the quacamole. Cut off the stems of the cilantro. Keep a leaf of cilantro for your garnish. Then cut your limes in half, squeeze on top. Lightly stir again.

4Taste to see if salt or pepper needs to be added. Spoon into a pretty clear glass dish. Garnish with a sliver of honey orange pineapple & cilantro. This can be eaten with tortilla chips, fresh veggies, crackers. Bon Appetite!
