This picture does not do the rollups any justice as it was taken before they had been refrigerated and sliced. I had these at a Lenten supper last week at church and they were very good. So appropriate for this time of year. Enjoy!

28 oz. packages cream cheese, softened

1 cmayonnaise, do not sub

1/2 - 1 pkgranch salad dressing mix

1 - 1 /2grated cheddar cheese

deli corned beef, chopped finely

1 pkgflour tortillas

1With mixer, mix the two packages of cream cheese and one cup of mayonnaise together; add Ranch Dressing mix and continue to mix. Add the chopped corned beef (the amount is whatever your taste is); I used about 3 - 4 slices; add the shredded cheddar cheese and stir everything until blended.

2Spread on flour tortillas and rollup. Wrap in plastic wrap and refrigerate overnight. Slice.

3Please Note: this recipe is not for those individuals watching their sodium intake. You might want to taste the mixture after adding 1/2 of the package of Ranch Dressing and if it is salty enough, do not add the rest of the package. With the addition of the corned beef, it can be a little salty for some folks. Additionally, you can use any kind of meat you would like. Ham would also be good with this recipe instead of the corned beef.
