pickled watermelon rind
Sweet yummy goodness. A forgotten treat. It has a similar flavor to a gerkins sweet pickle Used to see these all over the farmers market and crafty shows. 20 years I've been searching and can not find them.. . exception Amazon sells for + $25 a jar lol nope made my own. Kicking self for not making these earlier they are to easy and such a rush of childhood memories with grandma Why toss the rind when you can make these yummy treats!

Ingredients For pickled watermelon rind

1watermelon
-
4 cwater
-
1 csugar
-
I stickcinnamon

5-7cloves
-
6coriander seeds
-
1/2 tspdill

1/2-3/4 capple cider vinegar
-
1 tspginger
-
salt
-
1 Tbspbaking soda for rinse

1/2 tspred pepper flakes optional
How To Make pickled watermelon rind

1Wash well and Cut watermelon and place the red melon meat aside or eat

2peel the watermelon rind of its green skin leaving only the white flesh with just a wee touch of pink. Cut into chunks or strips

3place the strips in a bowl of water with salt and a bit of baking soda and allow to soak for about 5 minutes

4Drain chunks and wash well

5Place chunks in pot with water and bring to boil. Reduce to a low boil and boil off for about 20 minutes. The melon should loose the whiteness when done and be tender

6drain set melon aside

7Pour 4 cups of water, sugar, spices and about 1 tsp salt into pot. When sugar is dissolved add the watermelon rind back in . Bring back to boil and reduce heat

8Stir occasionally and simmer about 15 minutes. Add vinegar in and stir Continue to cook for about 15 minutes more

9When liquid is reduced by 1/2 they should be done. Allow to cool and place in container and place in frig. Enjoy!
