Nachos without meat are a treat that my picky eater will eat! She eats it as a meal; one could also serve this as an appy.

Ingredients For mouthful of nachos

1 lgonion, chopped

1 ptcherry tomatoes, chopped

1-2 tspjalapeño, minced (optional)

1 clovegarlic, minced
-
1/2 ccilantro, chopped

1/2 colive oil
-
1/2 tspgarlic salt
-
1/4 clime juice (from 2 limes)
-
8 oztortilla chips (or a large bag)
-
2 cshredded mexican blend cheese
-
1 cguacamole or mashed avocado
-
1/2 csour cream, or to taste
How To Make mouthful of nachos

1Preheat oven to 350ºF. Mix together onion, tomatoes, jalapeño, garlic and cilantro with the olive oil, lime juice and garlic seasoning salt.

2Spread tortilla chips evenly on a rimmed baking sheet. Spoon the tomato mixture on top of the chips. Then sprinkle cheese evenly over the top of that.

3Bake for about 5 minutes or until cheese is melted. Serve hot with guacamole/avocado and sour cream on the side.
