Nachos without meat are a treat that my picky eater will eat! She eats it as a meal; one could also serve this as an appy.

Ingredients For mouthful of nachos

  • 1 lg
    onion, chopped
  • 1 pt
    cherry tomatoes, chopped
  • 1-2 tsp
    jalapeño, minced (optional)
  • 1 clove
    garlic, minced
  • 1/2 c
    cilantro, chopped
  • 1/2 c
    olive oil
  • 1/2 tsp
    garlic salt
  • 1/4 c
    lime juice (from 2 limes)
  • 8 oz
    tortilla chips (or a large bag)
  • 2 c
    shredded mexican blend cheese
  • 1 c
    guacamole or mashed avocado
  • 1/2 c
    sour cream, or to taste

How To Make mouthful of nachos

    Preheat oven to 350ºF. Mix together onion, tomatoes, jalapeño, garlic and cilantro with the olive oil, lime juice and garlic seasoning salt.

    Spread tortilla chips evenly on a rimmed baking sheet. Spoon the tomato mixture on top of the chips. Then sprinkle cheese evenly over the top of that.

    Bake for about 5 minutes or until cheese is melted. Serve hot with guacamole/avocado and sour cream on the side.
