I made this favorite dish of my late wife,Peggy,I hope I did her justice,it was the hit of the party.The recipe is from an old cookbook from a church in Beaumont,Texas.Hope you all enjoy.

Ingredients For mexican cornbread

1 3/4cupscorn bread mix

1bunchgreen onions chopped

1medium yellow onion chopped

1small bell pepper chopped
-
3jalepenos chopped

2eggs
-
8 oz.sour cream
-
1small can creamed corn
-
1/2 lb.lean hamburger browned

6 slcesamerican cheese
-
pinchsalt
-
pinchground black pepper
How To Make mexican cornbread

1Mix together all ingredients except meat and cheese.

2Pour 1/2 mixture in large skillet pan.

3Add layer of all meat and cover completly with cheese.

4Top with remaining mixture and bake at 425 degrees for 35-40 minutes,to a light golden yellow,stick a fork in the middle,if it comes out clean,you're ready.
