I have never liked fruitcake even though my mother would give me one every year! I decided to try to come up with a recipe that would incorporate the fruitcake idea into a more edible cake-like compotent for an appetizer for my Christmas parties. This seems impossible but true - a fruitcake that tastes very good!

1 1/2 cflour, all purpose

1 1/2 csugar
-
1 tspbaking powder
-
1 tspsalt
-
6 lgeggs, beaten
-
3 tspvanilla
-
1 lbfruit mix, candied
-
chopped pecans - as desired
How To Make impossibly good fruitcake miniatures

1Preheat oven to 325 degrees. Line small(midget) cupcake pan with liners. Combine all ingredients; mix thoroughly. Spoon approximately 1 heaping teaspoon into baking cup liners.

2Bake between 20-25 minutes or until wooden pick inserted in center comes out clean. Cool completely. Wrap securely in plastic wrap or aluminum foil; store in refrigerator.
