The first time I made this a couple of years ago, I wondered how this was going to turn out. It turned out good the first time, and then every time after that. I love it, and I hope you will too.

Ingredients For hot and spicy hush puppies

1 cyellow cornmeal

3/4 cself-rising flour

1 tspsalt

1/2 tspsugar

1/2 tspcayenne pepper

1/2small, sweet onion, finely chopped

1/2jalapeno, finely chopped

4green onions, sliced thin

1large egg, beaten
-
1/4 cgrated cheddar
-
1 cbuttermilk
How To Make hot and spicy hush puppies

1Preheat deep fryer to 375 degrees F. (If you don't have a deep fryer, you can use a cast iron skillet, or a deep-sided electric skill or even a pot with oil, just check the temperature of the oil with a thermometer)

2Mix all the ingredients together into a large mixing bowl to form a thick batter.

3Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. ( You can skip this part if you want, and just use a flatware tablespoon and scoop the batter into the oil).

4Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray.

5*Note* You don't have to add the jalapeno unless you want to. It will still taste good with the other ingredients.
