This is a great recipe to use those fresh summer herbs and veggies from the garden or market. Serve it with your favorite toasted French Bread.

Ingredients For garlic tomato brueschetta

  • 1/4 c
    olive oil, extra virgin (you can use canola oil)
  • 3-4 Tbsp
    fresh basil, chopped
  • 3-4
    cloves garlic, minced
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 4
    medium diced tomatoes
  • 2 Tbsp
    parmesan cheese
  • your favorite french bread, toasted
  • 1-2 Tbsp
    finely chopped onion, optional

How To Make garlic tomato brueschetta

  • 1
    In bowl, combine oil, basil, garlic, salt and pepper and onion, if you choose to add them. Add tomatoes, toss gently, sprinkle with cheese. Regrigerate for 1 hour. Bring to room temp before serving. Lightly toast bread. Top with tomato mixture. Serve immediately.
