Ingredients For classic egg salad

12hard boiled eggs, peeled, chopped, not too small

1rib celery, minced

1/2 cmayonnaise, light if desired

3 Tbspred onion, minced

2 Tbspfresh parsley, minced

1 Tbspdijon mustard

1 Tbspfresh lemon juice

salt and pepper, to taste
How To Make classic egg salad

1Mix the mayo with all ingredients except eggs in a large bowl.

2Fold in eggs and add salt and pepper, to taste

3If made ahead of time, you can refresh it with a little extra mayo and lemon juice.
