Ingredients For classic egg salad

  • 12
    hard boiled eggs, peeled, chopped, not too small
  • 1
    rib celery, minced
  • 1/2 c
    mayonnaise, light if desired
  • 3 Tbsp
    red onion, minced
  • 2 Tbsp
    fresh parsley, minced
  • 1 Tbsp
    dijon mustard
  • 1 Tbsp
    fresh lemon juice
  • salt and pepper, to taste

How To Make classic egg salad

  • 1
    Mix the mayo with all ingredients except eggs in a large bowl.

    Fold in eggs and add salt and pepper, to taste
  • 3
    If made ahead of time, you can refresh it with a little extra mayo and lemon juice.
