cheater deviled eggs
My wife and the family are not fans of Deviled Eggs, they say just too much egg, except the Pickle Deviled Eggs I make, those are outstanding. So I happened across this recipe and made it, and it is very much liked, excellent flavor and is not like eating half an egg. Now I will experiment with soy sauce and tea eggs to make this more of an Asian flair to it.

Ingredients For cheater deviled eggs

3hard boiled eggs, chicken or duck

18butter crackers, plain or whole wheat

2 Tbspmayo
-
1 Tbspdijon mustard
-
paprika, as needed

fresh dill, as needed

black pepper, as desired
How To Make cheater deviled eggs

1Mix together the mayo and mustard in a small bowl. Slice the eggs crosswise with an egg slicer or knife.

2Spread some mayo mixture on each cracker, top with a slice of egg, skipping the end pieces with no yolk. Sprinkle a pinch of paprika, then pepper, and top with a small snippet of fresh dill. Serve.

3A note about the crackers, in the US, Ritz, plain or wheat, In Thailand and SEA, think Rosi or Magic brand, plain or whole wheat, local made and cost less than Ritz which are imported.
