These are great and are wonderful for a get together over the Christmas season as they can be made ahead and reheated or serve at room temperature!!

Ingredients For caramelized onion tarts

1/4 colive oil
-
2 lgspanish onions, sliced...regular onions are ok too

1/2 tspsalt
- FILLING

1 lgegg
-
1 cwhipping cream
-
1/3 ccoarsely chopped black olives
-
1 tspherbes de provence
-
2 Tbspbalsamic vinegar
-
1/2 cshredded percorino romano cheese
-
salt and freshly ground black pepper
- PASTRY
-
3/4 cbutter,,cut into chunks

3/4 ccream cheese
-
1/2 tspsalt
-
2 ca p flour
How To Make caramelized onion tarts

1Prepare your favorite pie crust or use the above. Combine all ingredients for pastry into a food processor and pulse to combine.Knead on floured board and roll into ball ...chill for one hour.Roll out and cut into 3 inch circles and fit into mini -muffin pan. Set aside.

2Heat olive oil in a large skillet over medium heat. Add onions, sprinkle with salt and cook stirring occasionally until deep golden brown. Set aside.

3Whisk together the whipping cream and egg. Season with s & p. Set aside. Combine caramelized onions, olives, herbs, balsamic vinegar and cheese in a bowl. Divide the onion mixture between tart shells and pour a scant tablespoon of cream mixture over top. bake at 375 for for 14 - 18 minutes until golden and baked through.So yummy!!
