These BLT skewers and a tasty appetizer twist on the classic sandwich. Each skewer is layered with salty pancetta, a sweet cherry tomato, fresh basil, and tangy sourdough bread. Pancetta is a great twist on traditional bacon (which would be a good substitute and just as delicious). They're wonderful dipped in cool ranch dressing. Serve at a backyard barbecue or a summertime picnic in the park. Who doesn't love to eat food from a stick?

Ingredients For blt skewers

1 Tbspextra virgin olive oil

1 lbsliced pancetta, cut into 1-inch triangles (1/2-inch-thick)

1 ptcherry tomatoes, halved

1fresh basil

3 ccubed sourdough bread, cut into 1 inch cubes
How To Make blt skewers

1Here's a great tip for halving the tomatoes. Take two round lids. Put some tomatoes on one and cover with the other.

2With a sharp knife, cut between the lids.

3Repeat until all are halved.

4In a large skillet, heat olive oil over medium heat. Add pancetta. Cook, stirring frequently, for 8 to 10 minutes or until lightly browned.

5Remove pancetta and drain on paper towels until cool.

6On 4-inch skewers, thread 2 pieces pancetta.

7Add 1 cherry tomato half.

8Add 1 basil leaf.

9Add 1 bread cube.

10Add to a tray. Serve alone or with ranch dressing.
