How To Make wow-wow pizza pull-aparts
-
1DOUGH:
-
2Add water, sugar and yeast to a small bowl and let set until bloomed: nice and foamy this can take up to 5 mins. If yeast doesn't bloom start it over it died somewhere along the way :)
-
3While you wait on your yeast to bloom add 3 1/2 cups flour and 1 tps salt to a stand mixer and whisk together making a well in the center attach dough hook (or bowl if you are kneading by hand)
-
4When yeast has bloomed pour into well in flour and add 2 tbs olive oil or oil of your choice (doing it this way lets the oil work through the dough at an equal mix)
-
5Set mixer to dough speed (mine is 2 on my Kitchenaid) and let dough work together this will take between 5-7 minutes. Dough will look rough and then will pull together in a nice smooth dough. When it does let it go for about 1 more minute to keep dough fluffy and soft when you bake it. You don't want to over work it. If kneading by hand knead until it all pulls together and at the smooth stage work for 1 minute more. The photo is the "shaggy" stage of the dough. If dough does not pull together add a couple of tbs. of flour at a time letting it work a minute or 2 between additions of each.
-
6When dough is pulled together it will be smooth and soft and not sticky, Push your thumb into it and it should slowly spring back. Knead dough with hands into a smooth ball
-
7Place dough is a lightly oiled bowl, turning dough to coat all sides and let rise in a warm draft free place I use my microwave it is perfect. This should take about 30 minutes or until doubled.
-
8Prepare a 9x13 inch baking dish by brushing olive oil on bottom and sides.
-
9Preheat oven to 425 degree.
-
10Mix all your spices for the topping in a small bowl
-
11Once dough has doubled remove to lightly floured surface and roll or pat into a large rectangle roughly 12x15 or a little bigger So Sorry I never measure nothing. Try to get it big enough for 20 to 24 3x3 squares.
-
12With a pizza cutter or sharp knife cut dough into 3x3 squares or larger you are just trying to get around 20 plus of them.
-
13Top dough with 2 slices pepperoni. If you decide to use just the pork pepperoni only use 3 slices total per bundle so there is not so much grease and also you will only need 1 package :)
-
14Add a cube of cheese to each.
-
15Add 2 more slices of pepperoni
-
16Now fold each into a bundle to do this fold one corner to center and then fold the opposite corner to meet it. Do this with all four corners this will leave 4 little corners now fold them the same way and pinch the seams to seal. (you will have some cheese escape during baking but that is OK it is really good!
-
17Place your little bundles in your baking dish as you make them.
-
18Brush tops with olive oil and sprinkle with the seasonings you mixed together.
-
19Place in 400 degree preheated oven for 20 - 25 minutes until golden brown
-
20When Wow-Wow's are done remove them to a cooling rack to cool for at least 10 minutes these little babies are HOT when they come out of the oven!
-
21Serve with your favorite homemade or store bought sauce to dip them in!
-
22HOMEMADE DIPPING SAUCE
-
23Add oil and garlic to pan (adding garlic to cold oil allows it to infuse the flavor to the oil) Once oil heats and garlic starts to cook add crushed tomatoes, water, basil, salt and pepper. Let come to a low boil and reduce heat to a simmer. Let simmer for about 10 minutes to mingle flavors and serve with your Wow-Wow's
-
24Meat Sauce: as posted above if you want a meat sauce cook burger or sausage half done and rinse under hot water to remove oils. Then add tomatoes and water and let finish cooking through, Sautee the garlic in oil and add it all to the pot with remaining ingredients and bring to low boil, reduce to simmer and let simmer for 10 minutes.
