This recipe says makes 2 rolls but I make 5 small ones ( about 5-6 inch logs) and give as gifts. Hunters ask me to make this for them and have been making this recipe since 1999.

Ingredients For venison salami

  • 3 lb
    ground venison
  • 1 lb
    ground pork
  • 1/4 c
    morton's tender quick salt
  • 2 Tbsp
    liquid smoke hickory flavoring
  • 2 tsp
    ground pepper
  • 2 tsp
    garlic powder
  • whole pepper corns (as many as you like)

How To Make venison salami

  • 1
    Mix thoroughly: venison and pork. Refrigerate overnight. Add: Liquid hickory smoke, black pepper, garlic powder and peppercorns. Mix well. Divide in half. Make 2 rolls. Put on second rack from bottom in the oven at 225 degrees for 4 hours. Let cool before using.
