Everyone has their own take on Tortilla Roll-ups and each one looks good. This is mine, have made it for many years. Hope you try and enjoy.

Ingredients For tortilla roll-ups (w/sausage)

  • 1 lb
    good sausage
  • 2 pkg
    8 oz cream cheese, softened
  • 1 can
    chopped green chilies (flat can)
  • 1
    small onion, minced (about 1 1/2 tbsp)
  • 1 jar
    chopped pimentos (small jar)
  • 1 c
    grated cheddar cheese
  • 1-2
    dozen flour tortillas
  • salt and pepper to taste

How To Make tortilla roll-ups (w/sausage)

    Cook sausage, mashing into very small pieces. Drain. Combine with cream cheese until well mixed. Add all other ingredients and mix well. Warm tortillas a couple at a time in the microwave (don't leave long, they will be hard). Spread a heaping tablespoon of mixture on the warm tortilla and spread all over, roll up like jelly roll and place in pan, seam side down. Continue until all are rolled. I like to cover mine and refrigerate over night, they cut better. But if you don't have time that is ok. Slice into 3/4 inch slices and place on plate. Continue until all are sliced.
