These will be a great hit with your family and friends for a Sunday brunch or a football party or even at a evening coctail party! The basic recipe is simple and you can spice it up from there. My mom would make one batch with plain breakfast sausage using corn muffin mix for us mild types, and another using spicey sausage for the wild types! You can add chopped onion or peppers, and even shredded cheese for a twist. These really are super versatile! And if your family and friends are anything like mine, I have to make 2 batches. They're usually eating them right off the cookie sheet as soon as I take them out of the oven!

Preheat oven to 425 degrees. In a mixing bowl, combine all of the ingredients. The sausage is uncooked and the muffin mix is dry just in case you were wondering. Mix well by hand or if you have a large industrial mixer you can use that. A hand mixer will not work.
