Ingredients For salami

  • 1 1/2 lb
    venison or ground beef
  • 1 1/2 Tbsp
    mortons tenderquick salt
  • 3/4 Tbsp
    liquid smoke flavoring
  • 1/8 tsp
    garlic powder
  • 1/2 c
    brown sugar
  • dash
    red pepper flakes, as much or little as you like

How To Make salami

  • 1
    Mix all ingredients together and form a log. Refrigerate uncovered for 24 hours.
  • 2
    Place on rack over a sheet cake pan to catch drips. Bake at 300º for 1 hour.
