It's a great appetizer or a pick-me-up snack. It's one of those things that you can't eat just one. One of many favorites here in Hawaii. I make a lot of this for game day.

Ingredients For pipikaula - hawaiian style beef jerky

3 lbflank steak

1 csoy sauce

1/4 cwater

1 Tbspoyster sauce

3 Tbspbrown sugar

1 Tbspgrated ginger

2 cloveminced garlic

2 Tbsphawaiian salt or rock salt

1/2 tspred chili pepper flakes (opt.)
How To Make pipikaula - hawaiian style beef jerky

1Cut the flank steak into 1 1/2 inch strips.

2Combine all ingredients and mix well, be sure that all the salt and sugar crystals are dissolved.

3Soak all the meat strips in the marinade overnight in the refrigerator.

4Use a rack with a drip pan below, you might want to cover the pan with foil for easier clean-up.

5Place all the strips of meat on the wire rack without it touching each other.

6Bake in the oven at 175 degrees for 7 to 8 hours. It should be pliable and not burnt.

7Slice it up diagonally. Keep it in an air tight container or in a zip-lock bag.

8Keep refrigerated.
