Ingredients For pineapple with peanut chicken topping

  • 1 Tbsp
    vegetable oil
  • 1/4 c
    shallots minced
  • 2 clove
    garlic minced
  • 1/2 tsp
    white pepper
  • 1 1/2 Tbsp
    fish sauce
  • 1/3 c
    brown sugar
  • 2 oz
    ground chicken
  • 2 oz
    uncooked shrimp finely chopped
  • 3 Tbsp
    peanuts chopped
  • 20
    pineapple triangles or rectangles about 1 inch by 1 inch and 1/2 inch thick
  • cilantro leaves for garnish

How To Make pineapple with peanut chicken topping

  • 1
    Place the vegetable oil in a large wok or skillet. Add the shallots, garlic and white pepper and saute 3 minutes. Add the fish sauce brown sugar, chicken and shrimp and cook until meat is no longer pink. Add the peanuts and cook until no moisture remains.

    Remove from heat and spread out on a flat plate and let cool completely.

    Place the pineapple slice on a serving plate. Top each with the meat mixture. Then top each with a cilantro leaf and serve
