Ingredients For peppy pizza pies
- FOR THE BISCUITS

1 cflour
-
2 tspbaking powder
-
1/8 tspbaking soda

1/2 tspsalt

1 1/2 Tbspcold butter, cut into pieces

1 Tbspshortening
-
1/2 cbuttermilk
- FOR THE PIZZAS
-
1/2 cpizza sauce, store bought, or mine posted here

1/2 ceach onions, green peppers, mushrooms

12slices pepperoni
-
4 ozmozzerella cheese, shredded
How To Make peppy pizza pies

1For the biscuits: whisk together the dry ingredients. Add the butter and shortening, and with your fingers, munch it in the flour until its nicely disbursed. Add the buttermilk and mix with spoon until just combined. Turn out on a floured surface. Turn a few times, kneading lightly.

2Roll out to a 1/4 inch round. Using a cookie cutter, cut out twelve circles. Oil a 12 cup cupcake pan and place a circle in each, pressing down lightly.

3Saute the onions, green peppers and mushrooms in a bit of oil until mostly done.

4Place a tsp of sauce in the center of each dough circle. Place one pepperoni slice on top of each. Top with a tsp of the toppings.Finish with a tablespoon of shredded mozzarella.

5Place in a preheated 375 oven for about 15 minutes or until the cheese has melted and the rims of the biscuits are lightly browned.

6Obviously the toppings are up to you. You could also do a mexican flavored filling. Or use sausage instead of pepperoni. Easy to double or triple of course if you are having a crowd.
