These are the best lettuce wraps I have ever had! I just love P.F Chang's anyway and anytime i'm in Nashville I have to have lunch or dinner there.

Ingredients For p.f. chang's lettuce wraps
- MARINADE

1 tspcornstarch
-
2 tspdry sherry or red wine

2 tspwater

2 tspsoy sauce
- COOKING SAUCE

1 Tbsphoisin sauce

1 Tbspsoy sauce
-
1 Tbspdry sherry or red wine

2 Tbspoyster sauce
-
2 Tbspwater
-
1 tspsesame oil
-
1 tspsugar
-
2 tspcornstarch
- FILLING
-
1 1/2 lbground chicken (or pork, turkey)

5 Tbspoil
-
1 tspfresh minced ginger
-
2 clovegarlic, minced
-
2green onions minced
-
2 smdried chillis, minced (optional)
-
8 ozcan bamboo shoots, minced
-
8 ozcan waterchestuts, minced
-
8dried shiitake mushrooms, minced (you could use dried oyster mushrooms)

12bib lettuce cups (you could use iceburg)

1 pkgcellophane noodles, prepared according to package
How To Make p.f. chang's lettuce wraps

1Mix marinade and add chicken. Cover and chill for an hour. Cover mushrooms with boiling water, let stand 30 minutes then drain. Cut and discard woody stems. Mince mushrooms, set aside.

2Mix all ingredients for cooking sauce in a bowl and set aside.

3Heat wok or large skillet over medium-high heat. Add 3 Tbsp oil. Add ground chicken or pork until browned. place meat in a bowl and Set aside.

4Add 2 Tbsp oil to the pan; add ginger, garlic, and onion. Cook for 2-3 minutes. Add mushrooms, bamboo shoots and water chestnuts. Stir an additional 2-3 minutes.

5Return meat to the pan; add mixed cooking sauce to the pan. Cook until thickened and hot.

6Break cooked cellophane noodle into small pieces and cover bottom of serving dish; Pour filling on top of noodles; reserve some for a garnish on top.

7Serve along side of lettuce for everyone to serve themselves. Spoon mixture into lettuce and roll like a burrito.
