It's a different take on nachos. We each like our nachos dressed differently so this recipe was born to satisfy each of us! Super simple, and the end results are quite delicious.

Ingredients For nacho pie for 2

  • 1/2 lb
    lean ground beef; turkey or chicken if you prefer
  • 2 c
    refried beans, canned or homemade
  • 3 Tbsp
    finely minced onion, yellow or white
  • 1 - 2 Tbsp
    taco seasoning
  • 1/2 c
    sour cream
  • 1/4 c
    diced green chilies, hot or mild
  • 1/4 c
    sliced or rough chopped black olives
  • 1/3 c
    chopped tomatoes
  • 2 Tbsp
    chopped green onions, white and green parts
  • 1 c
    shredded cheese - cheddar, jack, mozzarella or a combo
  • tortilla chips - plain or nacho cheese
  • sour cream, taco sauce, black olives and chopped green onions for garnish

How To Make nacho pie for 2

    Preheat oven to 350 degrees F. Lightly spray 2 individual pie dishes or an 8x8 baking dish and set aside.

    Brown the ground meat over medium heat in a saucepan. Drain well then return the cooked meat to the saucepan.

    Stir in the taco seasoning, onion, and refried beans and warm through.
  • 4
    Crush about 1-1/2 cups of tortilla chips and sprinkle a thin layer evenly over the bottom of the prepared pie dishes or baking dish.

    Spread the bean mixture evenly over the crushed chips.

    Spread sour cream over the bean mixture then top with the diced green chiles, black olives, tomatoes, and green onions.

    Sprinkle the cheddar cheese over all. Bake - uncovered - for 20-30 minutes or until the cheese is melted and bubbly.

    Serve hot garnished with a dollop of sour cream, extra olives, chopped green onions, and taco sauce along with a side of tortilla chips for scooping.
