Ingredients For nacho meatballs

  • 2 lb
    ground beef
  • 2
    eggs
  • 1/2 c
    ketchup
  • 1/4 c
    minced onion
  • 1/4 c
    minced green pepper
  • 1/4 c
    minced red bell pepper
  • 1/4 c
    minced jalapeno pepper
  • 20
    crushed saltine crackers
  • 4 clove
    garlic, minced
  • 1/2 c
    mashed potato flakes
  • 1 can
    salt and pepper
  • 1 can
    condensed nacho cheese soup
  • 1 can
    condensed cream of mushroom soup
  • 1 c
    water
  • 1 c
    Mexican blend shredded cheese
  • 1 clove
    french fried onions

How To Make nacho meatballs

    Preheat oven 350 degrees F. Mix the ground beef, eggs, ketchup, onion, green and red bell pepper, jalapeno, saltines, garlic, mashed potato flakes and salt and pepper together. Mix well and roll into balls. Place in a large baking pan. Bake for 1 hour, turning once.

    Mix the soups together with the water on stove top. Stir in the cheese until the cheese is melted. Pour over the meatballs. Bake 20 more minutes.

    Remove to a dish and garnish with the french fried onions.
