leftover essentials: taco/tater dip
Not exactly sure what to call this, but Taco/Tater Dip is what I came up with, and I am sticking with it. Anyway, it is just a few simple ingredients that work very well together. I am using mash potatoes as the base, but I believe rice would work well also. This was primarily made up of leftovers from a Mexican themed party I had the other day. So, you ready… Let’s get into the kitchen.

How To Make leftover essentials: taco/tater dip

1PREP/PREPARE

2You will need a small ovenproof pan or bowl to make this recipe. If you have a ramakin that would be excellent.

3I did not list portions, but I would say that the taco meat and the potatoes or rice should be 50/50, and use enough cheese to cover the top, leaving the edges open for the diced tomato.

4Gather your ingredients (mise en place).

5Place a rack in the middle position and preheat the oven to 350f/175c.

6Add the mash taters or rice to the bottom of your ovenproof pan or dish.

7To give the dish a bit of a kick, mix some salsa in with the taters or rice.

8Top with ground taco meat.

9Add cheese over the top.

10Place into the preheated oven and bake until the dish is heated through, and the cheese is bubbly, about 15 – 20 minutes.

11Add the chopped tomatoes.

13Serve with some sturdy chips or toasted bread. Enjoy.
