We ate this at a small restaurant in Abilene, TX. Their specialty is fried fish and it is delicious. I'll try to find the name and pass it along in case you are in or around, or make a special trip to Abilene. The name is CATFISH CORNER, 780 Treadaway Blvd. Abilene, TX.

Ingredients For fried bacon

  • 1 lb
    bacon, (my favorite is kirkland from costco)
  • 3 c
    self rising flour
  • 2 c
    buttermilk
  • oil for frying

How To Make fried bacon

    Use bacon that is not super super thin, or not thick either. Start with about 1 cup of flour, add more as needed. Pour flour into dish and buttermilk in another one. Dip one slice of bacon at a time in flour, then buttermilk and back into flour. Shake off excess flour and fry, making sure not to burn. Excellent served with white gravy for dipping.

    We first ate this at a catfish place in Abilene Texas (Catfish Corner). It is a local favorite, not a chain restaurant. The fish was excellent, as were the fried pickles, but expecially the bacon.
