Not quite pizza, not quite a sandwich, but absolutely delicious! These little beauties are made with lightly toasted English muffin halves that have been buttered and sprinkled with a touch of garlic powder, topped with paper-thin sliced prosciutto, homegrown tomatoes, fresh basil, and mozzarella, then baked in a toaster oven until melty and golden. (Note: Please allow for at least two per person.)

  • 1 1/2 Tbsp
    butter, softened
  • 2
    english muffins, split
  • several dash
    garlic powder
  • several dash
    grated Parmesan cheese
  • 1 c
    shredded mozzarella cheese, divided
  • 4 slice
    prosciutto (or thin shaved deli ham)
  • 4 thin slice
    fresh local tomato
  • 6 - 8 md
    fresh basil leaves
  • several
    kalamata olives, halved or sliced, optional

How To Make fresh tomato and prosciutto rounds

    Preheat toaster oven to 450 degrees F.
  • Lightly buttered English muffin halves.

    Lightly butter each muffin half and place on foil lined toaster oven baking pan.
  • Lightly buttered English muffin halves sprinkled with garlic.

    Lightly sprinkle each with a little garlic powder.

    Toast muffins in preheated toaster oven (controls set to "toast" mode) for 3 to 4 minutes, until just beginning to lightly brown.
  • Mozzarella on toasted muffins.

    Remove from oven; lightly sprinkle with a little Parmesan cheese and a generous pinch of shredded mozzarella.
  • Prosciutto on muffins.

    Place a folded slice of prosciutto over each muffin then return muffins to toaster oven for another 2-3 minutes.
  • Kalamata olives on 2 muffins.

    Remove from oven; place a slice of tomato and a few basil shreds on each muffin (and add olives if using.)
  • Rounds on foiled tray going into toaster oven.

    Top each muffin with some shredded mozzarella and return to toaster oven that is set to "bake" mode or convection/air-fry mode.
  • Rounds baked for 12 minutes.

    Bake 12 mins at 450 F. or until cheese is melted and begins to brown.
