double the bacon pretzel sticks

For those that love bacon (and who doesn't) this recipe is a must! It's also got a little twist on classic hummus to add to the yumminess!

Ingredients For double the bacon pretzel sticks

  • 4
    soft pretzel sticks, cut in half crosswise & lengthwise
  • 12 slice
    bacon (4 slices chopped & cooked, 8 slices raw)
  • 1/4 c
    hummus
  • 1/4 c
    cream cheese, softened
  • 8
    grape tomatoes, sliced in 4 round slices each
  • 1/4 c
    parmesan cheese

How To Make double the bacon pretzel sticks

    Preheat the oven to 350 degrees
  • 2
    Place the 16 pretzel pieces, cut-side down, on a baking sheet and bake for 3-5 minutes to crisp; let cool

    In a small bowl mix together the chopped bacon, the hummus and the softened cream cheese; set aside
  • 4
    Once the pretzel sticks have cooled, spread 1 - 1 1/2 tbsp of the hummus on each of the 8 pretzel bottoms

    Top the hummus with 3-4 slices of the grape tomatoes on each pretzel bottom
  • 6
    Shake the parmesan on top of the tomatoes and put the other half of each pretzel stick on the top (making 8 mini pretzel sandwiches)

    Wrap each of the 8 mini sandwiches with 1 piece of the raw bacon; make sure that when you wrap the pretzels that each of the ends of the bacon are on the underside of the pretzel

    Place the bacon wrapped pretzel sticks on a baking rack that has been placed in a baking pan; again making sure that the ends of the bacon are secured on the underside of each pretzel

    Bake at 350 degrees for 25 minutes or until the bacon is cooked and crispy

    Let the bacon wrapped pretzel sticks drain on a paper towel for 5 minutes before serving

    You can either serve these as they are or cut them in 2-3 pieces per pretzel stick to serve as appetizer bites
