This is a classic appetizer that can be grilled outdoors or roasted in an oven (when poor weather doesn't permit cooking outside). I think you'll find that it's actually quite a delicious little snack that's perfect for Luau-themed parties or anytime you're craving a quick trip to the islands.

Need a quick and easy appetizer? Look no further than these Spam bites (trust us). They're juicy and the hickory-smoked flavor shines through. We love the spice rub. It balances out the flavor of the Spam and bacon. Sweet and tangy, the honey mustard is perfect for dipping.
Ingredients For bacon wrapped spam bites with spicy honey mustard
- SPICY HONEY MUSTARD

3/4 cDijon mustard

4 Tbsphoney

1 - 2 Tbsphot sauce (I used Louisiana hot sauce but any will do, such as sriracha, etc)

1 1/2 tspWorcestershire sauce
- SPICE RUB

3 Tbspbrown sugar, firmly packed

1 TbspKosher salt

1 Tbsppaprika
-
1 Tbspgranulated sugar

2 tspchili powder
-
2 tspblack pepper
-
1 tspground coriander
-
1 tspground cumin
- SPAM BITES

1 canhickory smoke flavor Spam (12 oz)

8 slicebacon, cut in half
How To Make bacon wrapped spam bites with spicy honey mustard

1To make the spicy honey mustard, whisk all the ingredients together in a medium bowl until well blended. Set aside until ready to serve. (It's best served at room temperature, so you won't need to refrigerate it.)

2Place all the spice rub ingredients in a gallon-size ziptop bag and shake well until thoroughly blended.

3Cut the Spam into 16 cubes. Add the cubes to the bag and shake until they are coated with the seasoning rub.

4Lie the bacon slices on a flat surface. Place one seasoned Spam cube at the tip of each bacon slice, and roll to the other end so that the top and bottom of Spam is wrapped inside the bacon slice, leaving the sides open. Secure the end with a toothpick or short skewer.

5FOR GRILLING: Place the Spam bites on a hot grill for 7 - 10 minutes, or until the bacon is crisp-cooked but still moist, turning frequently for even grilling. FOR OVEN-BAKING: Place the Spam bites on a foiled-lined baking sheet and roast in the oven for 15 - 20 minutes at 375 degrees F. It's best to have about an inch space between them, as they'll stick together and tear the bacon wrap if too close on the baking sheet.
