I think you'll find that it's actually quite a delicious little snack that's perfect for Luau-themed parties or anytime you're craving a quick trip to the islands.

Ingredients For bacon wrapped spam bites with spicy honey mustard

  • SPICY HONEY MUSTARD
  • 3/4 c
    Dijon mustard
  • 4 Tbsp
    honey
  • 1 - 2 Tbsp
    hot sauce (I used Louisiana hot sauce but any will do, such as sriracha, etc)
  • 1 1/2 tsp
    Worcestershire sauce
  • SPICE RUB
  • 3 Tbsp
    brown sugar, firmly packed
  • 1 Tbsp
    Kosher salt
  • 1 Tbsp
    paprika
  • 1 Tbsp
    granulated sugar
  • 2 tsp
    chili powder
  • 2 tsp
    black pepper
  • 1 tsp
    ground coriander
  • 1 tsp
    ground cumin
  • SPAM BITES
  • 1 can
    hickory smoke flavor Spam (12 oz)
  • 8 slice
    bacon, cut in half

How To Make bacon wrapped spam bites with spicy honey mustard

Test Kitchen Tips
Depending on how crispy you like bacon, these may need to be cooked longer. We baked ours for about 35 minutes.
  • Dijon mustard, honey, hot sauce, and Worcestershire sauce whisked together.

    To make the spicy honey mustard, whisk all the ingredients together in a medium bowl until well blended. Set aside until ready to serve. (It's best served at room temperature, so you won't need to refrigerate it.)
  • Spice rub combined in a bowl.

    Place all the spice rub ingredients in a gallon-size ziptop bag and shake well until thoroughly blended.
  • Coating Spam cubes in spice rub.

    Cut the Spam into 16 cubes. Add the cubes to the bag and shake until they are coated with the seasoning rub.
  • Wrapping Spam in bacon.

    Lie the bacon slices on a flat surface. Place one seasoned Spam cube at the tip of each bacon slice, and roll to the other end so that the top and bottom of Spam is wrapped inside the bacon slice, leaving the sides open. Secure the end with a toothpick or short skewer.
  • Baking Spam bites in the oven.

    FOR GRILLING: Place the Spam bites on a hot grill for 7 - 10 minutes, or until the bacon is crisp-cooked but still moist, turning frequently for even grilling. FOR OVEN-BAKING: Place the Spam bites on a foiled-lined baking sheet and roast in the oven for 15 - 20 minutes at 375 degrees F. It's best to have about an inch space between them, as they'll stick together and tear the bacon wrap if too close on the baking sheet.
