This is one of those dishes that is really better the next day when it’s cold and goes really good with a grilled steak!

Ingredients For watermelon salsa

8 cups cubed & seeded watermelon
-
¼ large sweet onion minced
-
¼ red onion minced
-
4 jalapeno peppers or to taste, leave the seeds in if you like it hotter

2 cloves roasted garlic
-
1 cup apple juice
-
1 tablespoon apple cider vinegar
-
1 teaspoon salt
-
white sugar to taste “ optional "
How To Make watermelon salsa

1In a separate bowl smash the roasted garlic into a paste with the salt.

2Cook down the apple juice and vinegar till it is reduced by ½ Cool slightly.

3Add the cooked apple juice p to the garlic and mix once more. This should go into refrigerator to get it very cold.

4At this point you’ll want to mix the watermelon, onion’s & peppers together being careful not to crush the watermelon.

5If you want it hotter mix different peppers and if you want it on the sweeter side add some white sugar to the apple juice and mix till it is all dissolved.

6When you are ready to serve put the watermelon mixture into a bowl and spoon the apple juice over it. Mix to incorporate and serve. If you like it more wet add the whole apple juice mixture if not add it by tablespoons till you get it as you like it.
