watermelon pickles

My great-aunt Naomi made these every year when I was a child. I don't know which I liked better- eating the watermelon to get the rind or eating the pickles when they were finished! I am using her recipe and it doesn't say how many pints it makes.

Ingredients For watermelon pickles

10 lbs. watermelon rind

2 lbs. white sugar

1 qt. vinegar

1/2 oz. cloves
-
1 oz. cinnamon

water
How To Make watermelon pickles

1Place cubed watermelon rind in a large enameled or stainless steel pot.

2Cover with water and boil until tender. Drain.

3Make syrup of sugar, vinegar, and spices. Be sure it's boiling hot.

4Pour over watermelon rind boiling hot for three days in a row.

5On the last day put rind and hot syrup in jars and seal.
