This recipe was given to my mom from my Greek cousin, many years ago.

Ingredients For tiropitta (cheese triangles)

1/2 lbfeta cheese
-
4 ozcream cheese
-
2 Tbspparmesan cheese ,grated

2eggs
-
1 boxfilo dough (16 oz.)

1/2 cbutter, melted
-
oil
How To Make tiropitta (cheese triangles)

1Mix the cheeses & eggs well with a mixer.

2Cut one sheet of filo the long way into 2 inch strips. (Keep the rest covered with a damp cloth or towel)

3Mix butter with some oil & brush onto a filo strip.

4Place a teaspoon of the cheese mixture in a corner & fold it over in a triangle, repeating until you reach the end of the strip, like folding a flag. Brush some butter-oil on the top.

5Repeat with each strip until all the cheese is used.

6Place on a cookie sheet.

7Bake in a 350 oven for 15-20 minutes until brown & crispy.

8Makes 60-70 triangles. This is a bit time consuming.
