i came up with this recipe when i was in college... the dorm was havin a sunday night [the only meal that we didn't get there] potluck. i wanted somethin different[ i guess cuz i was in food service i thought i had to do somethin "BIG" lol i knew all in the dorm lked taco's so..... here we go... all loved it and i was asked by several to make it for them at different times of course i said sure i will as long as u buy the stuff... hubby is still buyin the stuff lol this makes a large ball serves many keeps well in fridge for 5-7 days as long as covered well

Ingredients For taco cheese ball

1 1/2 lbground round
-
1 bunchgreen onions,thinly sliced
-
1 smred bell pepper,chopped fine
-
1 smcan sliced black olives,drained well
-
1 ptgrape tomatoes, 1/2ved[grape tomatoes are smaller than cherry
-
1 pkgtaco seasoning mix
-
red pepper flakes,to taste or 1 jalapeno pepper chopped fine
-
4 pkg8 oz each... cream cheese
-
1 ptsour cream
-
1 lbextra sharp cheddar cheese,grated
-
chives, dried.. to taste and for color
-
corn chips.tortilla cips
How To Make taco cheese ball

1set cream cheese out of fridge to come to room temp...

2in lg fry pan cook ground round...drain well...add green onions,bell pepper and and jalapeno pepper...cook and stir bout 10 min...add taco seasoning and olives.. cook 5 min remove from heat let cool some

3put all cream cheese into lg bowl using hand mixer whip til light and fluffy...add sour cream blend well

4add meat mix,cherry tomatoes,and 1/2 the cheddar cheese... toss lightly... shape into lg ball cover with wax paper

5put in fridge several hrs or overnigh

6before serving mix rest of cheese and chives together.. put cheese and chives on lg plate roll cheese ball in this to coat well

7serve with chips... enjoy!!!
